Samoa Cookie Pudding {Grain-, Sugar- & Dairy-Free}
Since my daughter is a Girl Scout, we are in the middle of cookie sales. You know how I love cookies….I LOOOOOOOOOVE cookies! But not wheat-filled, inflame-my-body, cramp-my-stomach cookies. No, not those. But I do sometimes daydream about the Samoa cookies that are my all-time favorite Girl Scout cookie. Taking a cue from my Pumpkin Pie Pudding, I recreated that coconut-y, caramel-y, crunchy yumminess of the Samoa. I hope you like it as much as I do!
Ingredients
- 1 cup milk of choice (I use unsweetened almond milk)
- 2 tablespoons unsweetened cocoa powder
- 2 tablespoons unsweetened shredded coconut
- 1/8 teaspoon caramel extract
- 1/4 teaspoon coconut extract
- 1/4 teaspoon stevia glycerite (or sweeter, if desired)
- 4 tablespoons chia seeds
- 1/2 cup almond meal
- 1/4 cup oat fiber
- 3/4 cup chopped pecans
- 1/2 cup erythritol
- 1/4 teaspoon stevia glycerite (or sweeter, if desired)
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1/4 cup coconut oil (NOT melted)
Directions
Mix all ingredients together and let sit in the fridge for at least 30 minutes.
Preheat oven to 300 degrees.
Combine all ingredients except for the coconut oil, mix well. Cut the coconut oil into the mixture until crumbly. Spread onto a greased cookie sheet and cook for about 15 minutes, until it starts to brown. After removing from the oven, stir it around a bit. It will get crispy as it cools.
Mix some of the crunch into pudding and top with more shredded coconut. Enjoy!
Notes
*If you don't have the time or inclination to make the crunch (even though it is SO good), simply crush up your favorite healthy cookie instead.

Anne Marie, what can I replace for the oat fiber, maybe more pecans and almond meal? I cannot do grains at all.

I have used vanilla-flavored whey protein powder in place of the oat fiber and it works great. I also know of a reader who has tried milled golden flaxseed with good results.
I have a feeling this wouldn’t stand a chance in my house! It would be eaten all at once
(by me) LOL
