Personal Pumpkin Pie {Grain-Free, Sugar-Free}

I am really enjoying all the pumpkin recipes floating around the web. There are SO many! I’ve got several on my list to either try or to alter to make wheat/grain-free. I’ve been working on this one for a little while, though. I’ve been making one-minute-muffins/mug cakes for some time…they are great for a quick little snack or dessert without having to whip up a whole batch of something, and this one fits the bill perfectly. Because of the added moisture of the pumpkin it will have to cook longer than one minute, but it’s well worth the wait. Adding a bit on my “Sugar” & Spice Dip in the center makes it even more decadent!

Personal Pumpkin Pie {Grain-Free, Sugar-Free}

Cook Time: 3 minutes

Yield: 1 pie

Serving Size: 1 pie

Personal Pumpkin Pie {Grain-Free, Sugar-Free}

Ingredients

  • 2 tablespoons coconut flour
  • 2 tablespoons pecan meal (made like almond meal)*
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • pinch of salt
  • 1 egg
  • 2 tablespoons coconut oil, melted
  • 5 tablespoons pureed pumpkin (NOT pie filling)
  • 1 teaspoon vanilla
  • 2 tablespoons sugar-free maple syrup
  • sweetener equal to 3 tablespoons sugar
  • 2 tablespoons "sugar" & spice dip (optional)
  • chopped pecans for topping (optional)

Directions

In a small bowl mix the coconut flour and the next 6 ingredients together. In a separate bowl, lightly beat the egg and then add the next 5 ingredients. Mix the wet and dry ingredients together. Put half of the mixture into a microwave-safe bowl, add two tablespoons of the spiced dip, then top with the remaining pumpkin mixture. Sprinkle with pecans, if desired.

Microwave for 2.5-3.5 minutes, until desired firmness is reached. Allow to cool a bit before eating.

Notes

*you can substitute almond meal, walnut meal, or another nut for the pecan meal.
