Grain-Free Peanut Bread
In a quest to find a sandwich bread that my super-picky 5-year-old would eat, I decided to try peanut meal. He already likes peanuts and peanut butter, so I was hoping that it wouldn’t be a hard sell. And, guess what?!? Both kids really like this bread! It’s peanuty taste goes great with a PB&J…it’s just more “P!”
I like that peanuts are less expensive than almonds and almond flour. And I tossed in some flax to increase the fiber. In addition to PB&J sandwiches, we make french toast with this bread at least once a week. Enjoy!
Delicious and easy quick bread. Gluten-free, wheat-free, grain-free, low carb.
Ingredients
- -1 cup peanut meal (made from unsalted, dry roasted peanuts; make same way as almond meal)
- -3/4 cup golden flaxseed meal
- -2 tablespoons coconut flour
- -1/4 teaspoon salt
- -1.5 teaspoons baking soda
- -.75 teaspoon stevia glycerite or sweetener equal to 3/4 cup sugar
- -5 eggs
- -1/4 cup coconut oil, melted
- -1 tablespoon apple cider vinegar
Directions
Mix all the dry ingredients together in a bowl until well blended. In a separate bowl, slightly beat the eggs, then add the coconut oil and apple cider vinegar.
Pour the dry ingredients into the wet, mixing thoroughly until smooth (this may take a minute). Let the mixture sit while you preheat the oven to 350 degrees. Grease a small loaf pan* (mine measures 7.75 x 3.75") and, after the mixture has set for about 5 minutes, pour batter in, smoothing out the top.
Bake 20-25 minutes until sharp knife in center comes out clean.
Notes
*Baking gluten-free breads requires a small loaf pan. There is not much rise, so if you bake this in a traditional 9x5" pan, your loaf will be extremely short and squatty. When I first started gluten-free baking, I purchased a two-pack of small disposable loaf pans from Walmart and just reused them until I decided to go ahead and buy a "real" pan.
This loaf will make 24 "mini" slices. If you'd like larger slices, as pictured, slice the loaf in half, then lengthwise.

Okay, looks absolutely wonderful! How do you think cashews or almonds would work in place of the peanuts and do you think Tofu would be okay in place of the eggs? My daughter has egg and peanut allergies. I may just have to give it a try and see how it turns out

How interesting! We have tree nut allergies so we can’t use almond flour, which seems to be in a lot of GF breads. I love the idea of peanut meal.

Just made this today with a few changes (used almond meal and honey-only a 1/2 cup, could’ve gotten away with even less though) and it was fabulous!! Thank you so much for a GREAT recipe. I also made it in a 4.5X8.5 pan and baked it for around 45min and it turned out wonderful. Now we can have grilled cheese again!
