Grain-Free Chocolate Muffins
Have you tried using golden flaxseed meal yet? It is such a great ingredient that is inexpensive, high in fiber and high in other nutrients, too. It has a very mild flavor and I try to include it in as many recipes as I can. Here are the chocolate muffins we have been enjoying lately. I like to top these with cream cheese frosting and strawberries to make mini strawberry shortcakes, just like the original ones, except chocolatey!
Delicious, high fiber chocolate muffin. Gluten-free, wheat-free, grain-free, low carb.
Ingredients
- 1.25 cups golden flaxseed meal
- 2 tablespoons coconut flour
- 4 tablespoons unsweetened cocoa powder
- 2 teaspoons baking powder
- 1.5 tablespoons cinnamon
- 2.25 teaspoons stevia glycerite (or sweetener equal to 2.25 cups sugar)
- 1/2 teaspoon salt
- 4 eggs
- 1/4 cup coconut oil or butter
- 1/2 cup sour cream
- 1 teaspoon vanilla
Directions
Slightly beat the eggs, then add the sour cream, vanilla and coconut oil. Mix with a whisk until smooth.
In a separate bowl, mix the remaining dry ingredients together until well blended. Pour the dry ingredients into the wet, mixing thoroughly until smooth (this may take a minute).
Let the mixture sit while you preheat the oven to 350 degrees (325 for a dark pan). Grease muffin tin and, after the mixture has set for about 5 minutes, pour batter in, almost to the top.
Bake 20-25 minutes.

Made with coconut oil, each muffin contains 6.4 g protein, 9.6 g carb, 8.3 g fiber (1.3 g net carb), and .4g sugar.
To make these cinnamon only (and reduce net carbs to .6 g each), simply omit the cocoa powder.

Can I use 2.25 teaspoons honey instead of the stevia?
Any sweetener should work. Stevia glycerite is extremely concentrated though, so 2.25 teaspoons of it is equal to 2.25 cups of regular sugar. Substituting 2.25 teaspoons of honey will probably not make these muffins sweet enough. Another thing to consider is if you add 2.25 cups of honey, you’ll be adding a lot more liquid to the recipe. You might have to experiment and tweek it a bit. If you do try it, please leave a comment here so other readers can learn from your modifications.
