Cauliflower Fried “Rice” {Grain-Free, Low Carb}
Ever since my first success with cauliflower I’ve really been enjoying experimenting with it. So, in addition to yummy “Twice-Baked” Faux-tatoes and Sweet Faux-tato Casserole, we frequently enjoy fried “rice” made with cauliflower (and I’ll be sharing a delicious garlic “bread” recipe soon, too). This is an easy recipe that freezes well. I love to keep some in the fridge to have quick side dish handy.
Ingredients
- 1/2 head of cauliflower
- coconut oil
- 1 cup onion
- cooked peas
- cooked egg
- gluten-free soy sauce
Directions
Sautee onion in coconut oil for 3-4 minutes.
Rinse cauliflower and cut into chunks. Place in food processor and pulse until you get rice-like texture.
Add to the pan with the sautéed onion. I usually add more coconut oil and then season with salt, pepper and garlic powder. Add peas, egg and a splash or two of soy sauce. Sautee for a few minutes until heated through.
Notes
Incorporate any add-ins that you like. I frequently use shrimp or chicken.

I make cauliflower fried rice often and my family just loves it! I highly recommend it! I usually add a few carrots while cooking and a splash of sesame oil at the end. Good stuff!
Is it weird that I STILL haven’t made “cauliflowered” rice!! I need to suck up my laziness and just DO IT!
