Carrot Straws
This is a quick and easy little side dish (or snack!). I’ve seen carrot fries in a few places on the internet and tried them without great success. I never could get the carrots cut just right (I don’t have a mandolin). So, after failed attempts I quickly forgot them. Until I was in the produce section of my grocery and noticed matchstick carrots. I thought they would work great since they were very thin, a consistent size, and already cut!
When cooked, these remind me of onion straws you can get at some restaurants (except carrot-y, not onion-y). Light, crisp and savory. Enjoy!
Great little gluten-free snack. Wheat-free, grain-free, low carb.
Ingredients
- matchstick carrots
- olive oil
- salt
Directions
Preheat oven to 350 degrees.
Toss carrots in a little olive oil to lightly "dress" them (don't saturate). Sprinkle salt, toss, sprinkle salt, and toss again. Line carrots on a greased baking sheet (try not to overlap them). Bake for 15-30 minutes, keeping an eye on them, until crispy (check them every 5 minutes).

Oh yum! I can just tell those would be fabulous! You can’t go wrong when you roast veggies in the oven. Why anybody wants to fry them is beyond me!
